    Prepare the Fillings

    In a bowl, combine the cooked shrimp, rice noodles, julienned cucumber, julienned carrot, mint leaves, cilantro leaves, and avocado slices. Mix gently to combine.

    Soak the Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 15-20 seconds until it softens. Remove from the water and place it on a clean surface.

    Assemble the Wraps

    Place a lettuce leaf in the center of the softened rice paper. Add a portion of the filling mixture on top of the lettuce. Fold the sides of the rice paper over the filling and then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.

    Serve

    Arrange the wraps on a serving platter. Serve with a dipping sauce of your choice, such as hoisin sauce or peanut sauce.
