    Prepare the Ingredients

    Slice the pork belly into bite-sized pieces. Mince the shallots and garlic. Chop the green onions and chili (if using).

    Caramelize the Sugar

    In a clay pot or heavy-bottomed pot, heat the vegetable oil over medium heat. Add the brown sugar and stir until it melts and turns a golden caramel color.

    Add Pork

    Add the pork belly pieces to the pot, stirring to coat them in the caramel. Sear the pork until it is browned on all sides.

    Add Aromatics

    Stir in the minced shallots, garlic, and black pepper. Cook for about 2-3 minutes until fragrant.

    Add Fish Sauce and Water

    Pour in the fish sauce and water. Bring to a simmer, then reduce the heat to low. Cover the pot and let it braise for about 45 minutes.

    Finish with Green Onions

    After 45 minutes, add the chopped green onions and chili (if using). Stir and let cook for an additional 5 minutes.

    Taste and adjust seasoning if needed. Serve hot with steamed rice.
