    Prepare the Pickled Carrots

    In a small bowl, combine the water, sugar, and vinegar (if using). Add thinly sliced carrots and let them pickle for at least 30 minutes.

    Cook the Rice

    Rinse the rice under cold water until the water runs clear. Cook according to package instructions (usually 1 cup rice to 2 cups water). Set aside.

    Grill the Pork

    Marinate the pork loin with minced garlic, salt, and pepper for at least 30 minutes. Grill on medium-high heat for about 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C). Allow it to rest before slicing.

    Prepare the Vegetables

    Slice the tomatoes and cucumbers. Chop the green onions.

    Make the Fish Sauce Dressing

    In a small bowl, mix together fish sauce, lime juice, and a little water to thin it out. Adjust to taste.

    On a large plate, arrange the grilled pork, rice, sliced tomatoes, cucumbers, pickled carrots, and green onions. Add spring rolls on the side, and drizzle with the fish sauce dressing.
