    Marinate the Protein

    In a bowl, mix soy sauce, honey, minced garlic, minced ginger, sesame oil, and black pepper. Add the pork or chicken, ensuring it's well-coated. Cover and refrigerate for at least 30 minutes.

    Grill the Protein

    Preheat the grill to medium-high heat. Remove the protein from the marinade, letting excess marinade drip off. Grill for about 6-8 minutes per side, or until the internal temperature reaches 145°F (for pork) or 165°F (for chicken). Let rest for 5 minutes before slicing.

    Prepare the Rolls

    While the protein is resting, prepare rice paper wraps and gather greens and vermicelli noodles. Dip each rice paper in warm water for 10-15 seconds until pliable.

    Assemble the Rolls

    Layer greens, sliced grilled protein, and vermicelli noodles on the rice paper. Roll tightly, folding in the sides as you go. Repeat with remaining ingredients.

    Serve

    Serve the rolls with your choice of dipping sauce, like hoisin or peanut sauce.
