    Marinate the Pork

    In a bowl, combine soy sauce, brown sugar, minced garlic, black pepper, and vegetable oil. Add the pork shoulder, ensuring it's fully coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.

    Cook the Rice

    Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 4 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 18-20 minutes until the rice is tender. Fluff with a fork and set aside.

    Grill the Pork

    Preheat the grill to medium-high heat. Remove the pork from the marinade and grill for about 6-8 minutes on each side or until the internal temperature reaches 145°F (63°C). Let it rest for a few minutes before slicing.

    Prepare the Vegetables

    Slice the tomatoes, cucumbers, and chop the green onions. Arrange these, along with pickled carrots, on a serving platter.

    Make the Fish Sauce Dressing

    In a small bowl, mix the fish sauce with 1 cup of water. Adjust to taste by adding more fish sauce or water as desired.

    Serve

    On a plate, serve the grilled pork with rice, the sliced vegetables, spring rolls, and drizzle the fish sauce dressing over the top. Enjoy your meal!
