1. Prepare the Duck
Slice the duck breast into thin strips. Season with salt and black pepper.
2. Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.
3. Stir-fry the Duck
Add the duck strips to the skillet and stir-fry for about 5-7 minutes until the duck is browned and cooked through. Remove from the skillet and set aside.
4. Cook the Vegetables
In the same skillet, add a little more oil if needed. Add the minced ginger, sliced onion, and chopped scallions. Stir-fry for 2-3 minutes until the onions are translucent.
5. Combine and Season
Return the duck to the skillet. Add the soy sauce and sesame oil. Stir well to combine and cook for an additional 2 minutes.
6. Serve
Remove from heat and serve immediately, garnished with additional scallions if desired.
