Cooking Instructions
1. Prepare the Noodles
Cook rice noodles according to package instructions. Drain and set aside.
2. Cook the Duck or Shrimp
In a large pan, heat vegetable oil over medium-high heat. If using duck, sear the duck breast for about 5-7 minutes on each side until cooked through. Remove and slice thinly. If using shrimp, cook until pink and opaque, about 3-4 minutes.
3. Sauté the Vegetables
In the same pan, add chopped onion, garlic, ginger, bell peppers, carrot, and zucchini. Sauté for about 5-7 minutes until the vegetables are tender.
4. Make the Curry
Add curry paste to the vegetables and stir for 1-2 minutes. Pour in the coconut milk and soy sauce, and bring to a simmer.
5. Combine and Serve
Add the cooked duck or shrimp back into the pan, season with salt and lime juice. Let it simmer for another 2-3 minutes. Serve over rice noodles and garnish with fresh cilantro.
