Prepare the Noodles
Cook rice noodles according to package instructions until al dente. Drain and set aside.

Cook the Duck
In a large skillet or wok, heat vegetable oil over medium heat. Season the duck breasts with salt and pepper, then place skin-side down in the skillet. Cook for about 6-7 minutes until the skin is crispy. Flip the duck and cook for another 3-4 minutes for medium-rare. Remove from the skillet and let rest before slicing.

Make the Curry Sauce
In the same skillet, add minced garlic and grated ginger. Sauté for 1 minute until fragrant. Stir in the curry paste and cook for another 2 minutes. Pour in the coconut milk and fish sauce, stirring to combine.

Add Shrimp and Vegetables
Bring the curry sauce to a simmer and add the shrimp and mixed vegetables. Cook for about 5-7 minutes, or until the shrimp are pink and the vegetables are tender.

Finish the Dish
Slice the rested duck and add it to the curry. Stir in lime juice and adjust seasoning if needed. Serve the curry over the cooked rice noodles and garnish with fresh cilantro.
