Directions
- 1
Prepare the noodles
Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water. Set aside.
- 2
Prepare the shrimp
If not already done, cook and peel the shrimp. You can boil, steam, or sauté them until they are opaque and cooked through.
- 3
Soften the rice paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and lay it flat on a clean surface.
- 4
Assemble the rolls
On the softened rice paper, place a lettuce leaf, a small portion of the cooked noodles, a few shrimp, and some fresh mint and cilantro leaves. Be careful not to overfill.
- 5
Roll the wrapper
Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top, forming a neat roll. Repeat with remaining ingredients.
- 6
Prepare the dipping sauce
In a small bowl, mix lime juice, soy sauce, and chili sauce. Adjust to taste.
- 7
Serve
Serve the crystal rolls with the dipping sauce on the side.
