Prepare the Sauce
In a small bowl, mix the soy sauce, cornstarch, and water until smooth. Set aside.

Sauté Vegetables
In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.

Add Snow Peas and Water Chestnuts
Add the snow peas and water chestnuts to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Add Cashew Nuts
Add the cashew nuts to the skillet and stir to combine with the vegetables.

Finish the Dish
Pour the prepared sauce over the mixture in the skillet. Stir well to coat the vegetables and cashews. Cook for an additional 2-3 minutes until the sauce thickens.

Season and Serve
Drizzle sesame oil over the dish and season with salt and pepper to taste. Serve hot.
