Toast Sesame Seeds (if not toasted)
Place a small dry skillet over medium heat. Add 2 tablespoons sesame seeds and toast, shaking pan frequently, until fragrant and lightly golden, about 2–3 minutes. Transfer to a plate to cool.
In a medium bowl, combine 1 cup tahini, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon toasted sesame oil, 1 teaspoon honey (or maple syrup), 1 teaspoon minced garlic, 1/2 teaspoon minced fresh ginger, 1/2 teaspoon chili paste, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
Whisk the mixture to start; it will be thick and pasty. Gradually add 1/2 cup water while whisking (or a little less/more) until the sauce reaches a smooth, pourable consistency. If it’s too thick, add hot water 1 tablespoon at a time to loosen and help emulsify.
Taste and adjust: add more soy sauce for salt/umami, more rice vinegar for brightness, more honey for sweetness, or more chili for heat. The ideal balance is savory-sour-slightly sweet with a sesame-forward aroma.
Stir in the toasted sesame seeds. For a smoother texture, reserve 1 tablespoon of seeds to sprinkle when serving; fold the rest into the sauce.
For Serving / Optional Mix-ins
Transfer the sesame sauce to a jar or serving bowl. Sprinkle sliced scallions and chopped cilantro on top if using.
Serve alongside grilled meats, roasted vegetables, cold noodle salads, or as a dip for raw vegetables. Squeeze a lime wedge over the sauce or the finished dish just before serving for brightness.
Store: keep leftover sauce in an airtight container in the refrigerator for up to 5 days. If it thickens in the fridge, whisk in 1–2 tablespoons of warm water per 1/4 cup sauce before serving to restore pourable texture.
