Prepare saffron jewel rice

    Rinse rice

    Rinse basmati rice under cold water until the water runs clear; drain.

    In a medium pot, bring 2 cups of water to a boil. Stir in the rice, saffron threads, crushed pink peppercorns, salt, and olive oil. Reduce heat to a simmer, cover, and cook until the water is absorbed and the rice is tender (about 15 minutes). Fluff with a fork before serving.

Make treasure glaze

    Combine glaze ingredients

    In a small saucepan, whisk together honey, soy sauce, and rice vinegar. Add orange zest.

    Simmer 2-3 minutes until slightly thickened. Remove from heat and reserve for glazing the salmon.

Prepare salmon

    Pat dry and season

    Pat salmon fillets dry with paper towels. Lightly season both sides with salt and pepper.

    Brush the salmon with half of the treasure glaze and let rest 5 minutes to let flavors meld.

Cook salmon and finish glaze

    Preheat oven to 400F / 200C. Place salmon on a parchment-lined baking sheet and roast for 10-12 minutes, until just opaque in the center.

    Prepare treasure toppings

    In a small bowl, gently toss pomegranate seeds with chopped mint leaves.

    To plate, mound saffron jewel rice on each plate, place a salmon fillet on top, drizzle with any remaining glaze, and sprinkle the pomegranate-mint jewels. If using, decorate with edible gold leaf pieces.
