Prepare the Oysters

Shuck the fresh oysters and place them in a bowl. Pour in the buttermilk and let them soak for at least 30 minutes.

Combine Dry Ingredients

In a separate bowl, mix the flour, cornmeal, paprika, cayenne pepper, garlic powder, salt, and black pepper.

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Oysters

Remove the oysters from the buttermilk, allowing the excess to drip off. Dredge each oyster in the flour-cornmeal mixture until well coated.

Fry the Oysters

Carefully place the coated oysters in the hot oil, frying them in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Prepare the Sauce

In a small bowl, mix together mayonnaise and hot sauce. Adjust to taste.

Serve the hot fried oysters with pickles and a side of the spicy mayo sauce for dipping.
