Ceviche Preparation

    Poach the Shrimp

    In a pot of boiling water, gently poach the shrimp for about 2-3 minutes until they turn pink and opaque. Remove from heat and transfer to an ice bath to stop the cooking process.

    Prepare the Tiger’s Milk

    In a large mixing bowl, combine the lime juice, jalapeño, salt, and pepper to create the tiger's milk.

    Combine Ingredients

    Once the shrimp are cool, chop them into bite-sized pieces and add them to the bowl with the tiger’s milk. Stir in the cucumber, celery, avocado, and cilantro, mixing gently to combine.

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

    Serve the ceviche chilled with blue corn chips on the side for dipping.
