Cooking the Fries

    Cut the Potatoes

    Peel and cut the russet potatoes into thick strips (about 1/4 to 1/2 inch wide).

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

    Heat the Beef Fat

    In a large pot or deep fryer, heat the beef fat to 350°F (175°C).

    Dry and Fry the Potatoes

    Drain and dry the potatoes thoroughly with paper towels. Carefully add a batch of potatoes to the hot beef fat and fry for about 5-7 minutes, or until golden brown and crispy. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, season them with salt and pepper to taste.

    Serve

    Serve the crispy beef fat fries hot with the garlic ranch dip on the side.
