Cooking Pasta
Boil Water
In a large pot, bring water to a boil. Add a pinch of salt.
Cook Pasta
Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.
Preparing Vegetables
Chop Vegetables
While the pasta is cooking, chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and separate the broccoli florets.
Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant.
Add Vegetables
Add the chopped bell peppers, zucchini, carrot, broccoli, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until they start to soften.
Add Spinach
Add fresh spinach to the skillet and cook until wilted. Season with salt and black pepper.
Combining Ingredients
Combine Pasta and Vegetables
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together to combine.
Serve
Remove from heat and sprinkle grated Parmesan cheese on top before serving. Adjust seasoning to taste.
