Fried Goat Cheese Croquettes

Make the Goat Cheese Mixture
In a bowl, mix the goat cheese and cream cheese until well combined. Stir in the chopped parsley, salt, and black pepper. Form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet. Freeze for about 30 minutes.

Prepare the Breading Station
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Croquettes
Remove the goat cheese balls from the freezer. Roll each ball in flour, dip in beaten eggs, and coat with panko breadcrumbs. Place them back on the baking sheet.

Fry the Croquettes
In a large skillet, heat olive oil over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Remove and place on a paper towel-lined plate to drain.

Serve
Plate the fried goat cheese croquettes and top each clam with a bit of the crispy pancetta and a sprinkle of grated Parmesan cheese. Serve with lemon aioli on the side.
