Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and set aside.

Cook the Bacon
In a large skillet over medium heat, cook the smoked bacon until crispy. Remove from the skillet and crumble into pieces. Leave the bacon fat in the skillet.

Sauté the Brussels Sprouts
In the same skillet with the bacon fat, add the Brussels sprouts, season with salt and pepper, and sauté for about 8-10 minutes or until they are golden brown and tender.

Add Sundried Cherries
Add the sundried cherries to the skillet and stir to combine. Cook for an additional 2 minutes.

Prepare Balsamic Gastrique
In a separate saucepan, combine balsamic vinegar and maple syrup over medium heat. Bring to a simmer and reduce until slightly thickened, about 5-7 minutes.

Serve
Remove the Brussels sprouts from heat, and stir in the pickled mustard seeds and crumbled bacon. Drizzle with balsamic gastrique and top with maple crème fraîche before serving.
