Prepare the Frites

Peel and cut the potatoes into thin strips. Rinse under cold water and pat dry.

Fry the Potatoes

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt.

Cook the Steak

Season the prime top sirloin steak with salt and black pepper. Heat a skillet over medium-high heat, add oil, then sear the steak for 4-5 minutes on each side for medium-rare. Let rest for 5 minutes before slicing.

Prepare the Sauce Dianne

In the same skillet, melt the butter over medium heat. Add chopped shallots and sauté until translucent. Stir in the Dijon mustard and Worcestershire sauce. Pour in the heavy cream and let it simmer until thickened. Add chopped parsley and season with salt and pepper.

Blister the Green Beans

In a separate pan, heat a little oil and add green beans. Cook until blistered and tender, about 5-7 minutes. Season with salt.

Assemble the Plate

On a plate, place the sliced steak, drizzle with Sauce Dianne, and serve with potato frites, arugula, cherry tomatoes, red onion slices, and blistered green beans.
