Soak the chickpeas

Rinse 1 cup dried chickpeas under cold water. Place in a bowl and cover with at least 3 cups fresh water. Stir in 1/2 teaspoon baking soda (optional — helps soften). Soak at room temperature for 8–12 hours or overnight until doubled in size.

Cook the chickpeas

Drain and rinse soaked chickpeas. Transfer to a large pot and add 4 cups fresh water and the remaining 1/2 teaspoon baking soda. Bring to a boil, reduce to a simmer, skim any foam, and cook gently until tender but still holding shape, 45–60 minutes. Add 1.5 teaspoons kosher salt in the last 10 minutes of cooking. Drain and reserve 1/4 cup of cooking liquid. Chill briefly or cool to warm for salad.

Prepare dressing

In a small bowl whisk together 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, minced garlic, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, and 1/2 teaspoon ground black pepper. Taste and adjust salt as needed.

Combine vegetables and aromatics

In a large bowl combine the cooled cooked chickpeas, 1/4 cup chopped fresh parsley, 1/4 cup finely diced red onion, 1 cup halved cherry tomatoes, 1 cup diced cucumber, and 2 tablespoons toasted pine nuts (or almonds). If using, add 1/2 cup crumbled feta.

Dress and toss

Pour the dressing over the chickpea-vegetable mixture. Toss gently to coat, adding up to 2–3 tablespoons reserved cooking liquid if you want a looser dressing and to help flavors marry. Adjust seasoning with salt and pepper to taste.

Finishing & Serving

Transfer the dressed chickpeas to a serving bowl. Drizzle with 1 tablespoon olive oil, sprinkle with 2 tablespoons additional fresh herbs, and garnish with extra toasted nuts if desired.

Serve at room temperature or chilled with lemon wedges on the side. This salad keeps well refrigerated for up to 3 days; stir before serving and add a splash of lemon or reserved cooking liquid if it seems dry.
