Prepare marinade and chicken

In a medium bowl or measuring cup, combine soy sauce, distilled white vinegar, water, minced garlic, brown sugar, ground black pepper, lightly crushed peppercorns and bay leaves. Stir until sugar dissolves. Taste briefly and adjust balance — it should be tangy-salty with a hint of sweetness.

Place chicken breasts in a large resealable plastic bag or shallow dish. Pour the adobo-style marinade over the chicken, ensuring pieces are submerged or well coated. Seal the bag, pressing out excess air, or cover the dish tightly with plastic wrap.

Refrigerate and marinate for at least 1 hour, ideally 4–6 hours for good flavor penetration. For strongest adobo scent, marinate up to 12 hours. Do not exceed 24 hours to avoid textural breakdown from the vinegar.

Cook & finish

Remove and pat dry

Remove chicken from the refrigerator 20–30 minutes before cooking to take the chill off. Reserve the marinade. Pat each breast dry with paper towels — this ensures a good sear.

Sear the chicken

Heat 1 tablespoon vegetable oil in a large heavy skillet (cast iron or stainless steel) over medium-high heat until shimmering. Add chicken breasts and sear without moving for 3–4 minutes until a deep golden-brown crust forms. Flip and sear the other side 2–3 minutes.

Simmer in marinade

Carefully pour the reserved marinade into the skillet with the chicken (use caution — hot oil may spit). Bring to a gentle simmer, reduce heat to medium-low, partially cover, and cook for 8–12 minutes, flipping once halfway, until the internal temperature reaches 165°F (74°C) and juices run clear. Cooking time depends on thickness—adjust as needed.

Reduce sauce (optional)

Transfer chicken to a plate and tent with foil to rest. Increase heat to medium-high and boil the simmered marinade for 3–5 minutes to reduce and slightly thicken into a glossy adobo sauce. Taste and adjust seasoning (add a pinch of sugar if too sharp or a splash of water if too salty).

Finish

Return chicken to the skillet and spoon the reduced sauce over the breasts to glaze. Alternatively, slice the chicken and coat with the sauce. Add remaining 1 tablespoon vegetable oil if you want a slightly shinier finish. Let rest 3 minutes before serving.

Serve

Plate each chicken breast with 1 cup cooked steamed rice. Spoon extra adobo sauce over the chicken and rice. Garnish with sliced green onions and cilantro, and serve with a lime wedge to squeeze over just before eating.

Leftovers: cool to room temperature, then refrigerate in an airtight container up to 3 days. Reheat gently in a skillet with a splash of water or in the microwave, spooning sauce over to keep moist.
