Method

Preparation

  1. 1

    Prepare the Tuna Mixture

In a medium bowl, drain the canned tuna and flake it with a fork. Finely chop the red onion and add it to the bowl with the tuna.

  2. 2

    Mix in Sauces

Add the chipotle aioli and chiltepin pepper salsa negra to the tuna and onion mixture. Stir until well combined. Season with salt and pepper to taste.

  3. 3

    Prepare the Tortillas

In a skillet, heat olive oil over medium heat. Once hot, add the corn tortillas one at a time, cooking each side for about 30 seconds until they are slightly crispy. Remove and set aside.

  4. 4

    Assemble the Sope

Take each tortilla and top it with a generous scoop of the tuna mixture. Garnish with micro greens on top.

  5. 5

    Serve

Arrange the prepared tuna sopes on a serving platter and serve immediately, accompanied by extra salsa negra if desired.
