Cook the Pork
Add enough water to the pot to cover the pork, add the seared pork shoulder back, and simmer on low for about 3 hours or until the meat is tender and easily shredded.

Make Guajillo Sauce
Remove the stems and seeds from the guajillo peppers. Soak them in hot water for about 15 minutes, then blend with a little water until smooth. Set aside.

Prepare Potatoes
Dice the potatoes and boil in salted water until tender. Drain and set aside.

Scramble the Eggs
In a bowl, whisk the eggs with a pinch of salt. Cook them in a non-stick skillet over medium heat, stirring gently until just set. Remove from heat.

Add Green Chili Sauce
Top the burritos with green chili sauce and a dollop of lemon crema made by mixing sour cream and the juice of the lemon.

Garnish
Finish with chopped scallions on top before wrapping the burrito tightly.

Serve the burritos warm, with additional guajillo sauce on the side if desired.
