    Prepare the Ginger-Infused Base

    In a small saucepan, combine the grated ginger and 1 cup of pomegranate juice. Heat over medium heat until just simmering. Remove from heat and let steep for 10 minutes to extract the ginger flavor.

    Strain the Base

    After steeping, strain the ginger-infused pomegranate juice through a fine mesh sieve into a bowl or measuring cup, discarding the ginger solids. You should have about 1.5 cups of ginger-infused pomegranate juice.

    Mix the Cocktail

    In a large cocktail shaker, combine the ginger-infused pomegranate juice, remaining 0.5 cup of pomegranate juice, thyme leaves, gin (or mezcal or Pelacañas), simple syrup, and fresh lemon juice. Fill the shaker with ice cubes.

    Shake Well

    Secure the lid on the shaker and shake vigorously for about 15-20 seconds until well chilled.

    Strain and Serve

    Strain the cocktail mixture into glasses filled with ice cubes, leaving some space at the top.

    Garnish each glass with a sprig of thyme and a sprinkle of pomegranate seeds for a vibrant finish.
