Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Add Carrots and Walnuts
Fold in the grated carrots and chopped walnuts until evenly distributed.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake
Once baked, remove from oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
Goat Cheese Frosting

Beat the Frosting Ingredients
In a mixing bowl, beat together the cream cheese, goat cheese, and butter until creamy and smooth.

Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and fluffy.

Frost the Cake
Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer, then place the second layer on top and frost the top and sides of the cake.
Orange Carrot Glaze

Prepare the Glaze
In a small saucepan, combine the orange juice, granulated sugar, cornstarch, and water. Stir well to combine.

Cook the Glaze
Heat the mixture over medium heat, stirring constantly, until it starts to thicken and bubble.

Add Orange Zest
Remove from heat and stir in the orange zest. Let it cool slightly before drizzling over the frosted cake.
