Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Mix Eggs and Sugar
In another mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and fluffy.

Combine Mixtures
Pour the melted chocolate mixture into the egg mixture, and add the vanilla extract and salt. Gently fold together until well combined.

Add Flour
Sift the all-purpose flour into the chocolate mixture and fold until just combined. Do not overmix.

Bake Lava Cakes
Divide the batter evenly among the prepared ramekins. Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

Cool and Serve
Let the cakes sit for 1 minute, then carefully invert onto plates. Serve warm with the orange-mascarpone cream.

Whip Cream
In a mixing bowl, add the heavy cream and powdered sugar. Use an electric mixer to whip until soft peaks form.

Combine with Mascarpone
Add the mascarpone cheese, orange zest, and orange juice to the whipped cream. Gently fold until smooth and well combined.

Chill
Refrigerate the orange-mascarpone cream for at least 20 minutes before serving to firm up slightly.
