Method

Bean Puree

    Prepare the Bean Puree

    In a medium saucepan over medium heat, combine the canned black beans, minced garlic clove, lime juice, salt, and cumin. Cook for about 5 minutes until heated through.

    Blend the Beans

    Transfer the mixture to a blender and blend until smooth. If needed, add a tablespoon of water to reach the desired consistency. Set aside.

Fried Eggs

    Heat the Skillet

    In a non-stick skillet over medium heat, melt the butter.

    Fry the Eggs

    Crack the eggs into the skillet and sprinkle with salt and black pepper. Cook for about 2-3 minutes until the whites are set but the yolks are still runny. Remove from heat.

House Salad

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

    Drizzle with olive oil and balsamic vinegar, then sprinkle with salt and black pepper. Toss to combine.

    Toast the sourdough bread slices until golden brown.

    While the bread is toasting, scoop the ripe avocados into a bowl and mash with a fork. Season with salt to taste.
