Method

Preparation of Trout

    Marinate the Trout

    In a bowl, mix together the achiote paste, lime juice, and olive oil. Add the trout fillets, ensuring they are well coated. Cover and marinate for at least 30 minutes.

    Fry the Trout

    Heat a skillet over medium heat and add a little olive oil. Once hot, add the marinated trout fillets and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove from skillet and set aside.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over low heat for about 30 seconds on each side until pliable. Keep them warm by wrapping in a clean kitchen towel.

Preparation of Slaw

    Make the Slaw

    In a large bowl, combine shredded cabbage, grated carrot, lime juice, olive oil, and salt. Toss well to combine and let sit for at least 10 minutes to soften.

    In a small bowl, mix together the mayonnaise, finely chopped jalapeño, lime juice, and minced garlic. Stir until well combined and set aside.

    On each warm tortilla, place a piece of fried trout, top with lime-oil slaw, and drizzle with jalapeño aioli. Serve immediately.
