Prepare glass

Chill a large wine glass or rocks glass by filling it with ice and set aside while you build the cocktail.

Combine base ingredients

Discard the chilling ice and add fresh ice to the glass (about 3/4 full). Pour in 2 oz Navarro blanco tequila, 1 oz Aperol, 1/2 oz fresh lemon juice and 1/4 oz agave syrup directly into the glass.

Add bitters and stir

Add 2 dashes of orange bitters. Gently stir the mixture 6–8 times with a bar spoon to chill and lightly dilute (about 10–12 seconds).

Top with bubbles

Carefully top the cocktail with 2 oz chilled Prosecco and 1 oz chilled soda water. Give a gentle single-turn stir to integrate the sparkling components without flattening them.

Garnish and serve

Garnish with an orange wheel perched on the rim and a sprig of thyme if using. Serve immediately while sparkling.
