Preparation

    Prepare the Tofu

    Press the tofu to remove excess moisture, then cut it into 1-inch cubes.

    Chop the Vegetables

    Wash and chop all the vegetables as per the sizes mentioned in the ingredients.

    Prepare the Rice

    If not already cooked, prepare the rice according to package instructions. Set aside.

Cooking

    Cook the Tofu

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.

    Stir Fry the Vegetables

    In the same skillet, add the minced garlic and ginger, and sauté for 30 seconds until fragrant. Add the broccoli, bell pepper, carrots, snow peas, and zucchini. Stir fry for about 5-7 minutes until the vegetables are tender-crisp.

    Combine Everything

    Return the cooked tofu to the skillet. Add the soy sauce and red pepper flakes, stirring everything together. Cook for an additional 2-3 minutes to heat through.

    Serve

    Spoon the vegetable stir fry over a bed of cooked rice. Garnish with sesame seeds and chopped green onions before serving.
