    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the bell pepper, zucchini, and carrot. Sauté for 5-7 minutes or until the vegetables are tender.

    Add Cherry Tomatoes and Spinach

    Stir in the cherry tomatoes and spinach into the skillet with the sautéed vegetables. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften.

    Combine with Pasta

    Add the cooked pasta to the skillet with the vegetables. If the mixture is too dry, add reserved pasta water, a little at a time, until you reach the desired consistency.

    Season and Serve

    Stir in chopped basil, lemon juice, salt, and black pepper. Mix well to combine all ingredients. Serve warm and top with grated Parmesan cheese.
