Preparing the Roasted Vegetables

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Vegetables

    Wash and chop the carrots into bite-sized pieces, the bell pepper into strips, the zucchini into half-moons, and the red onion into wedges.

    Season the Vegetables

    In a large mixing bowl, combine the chopped vegetables with olive oil, salt, black pepper, garlic powder, and dried thyme. Toss until evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through.

Cooking the Salmon

    Season the Salmon

    While the vegetables are roasting, season both sides of the salmon fillets with salt and black pepper.

    Heat the Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Cook the Salmon

    Gently place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes without moving them, until the skin is crispy and the fish is cooked halfway up the sides.

    Flip the Salmon

    Carefully flip the salmon fillets and squeeze the juice of half a lemon over them. Cook for another 3-4 minutes, or until the salmon is cooked to your desired doneness.

    Garnish and Serve

    Remove the salmon from the skillet and garnish with fresh dill if desired. Serve alongside the roasted vegetables and lemon wedges.
