Preparation of Salmon

Marinade the Salmon
In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow the salmon to marinate for at least 30 minutes at room temperature.

While the salmon is marinating, preheat your grill to medium-high heat.

Cook the Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water (or broth for more flavor). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Fluff with a fork before serving.
Plating the Dish

Serve
On each plate, serve a portion of grilled salmon alongside a serving of quinoa and a few pieces of grilled asparagus. Optionally, garnish with extra dill or lemon slices.
