Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

    Form the crust

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan, ensuring it is evenly distributed and compact. Use the bottom of a measuring cup or your fingers to create an even layer.

    Bake the crust

    Bake the crust in the preheated oven for about 8-10 minutes, until it is golden and set. Remove from the oven and let it cool while you prepare the filling.

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add sugar and sour cream

    Gradually add the granulated sugar and continue mixing until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

    Incorporate eggs and flour

    Add the eggs one at a time, mixing on low speed until just combined. Avoid overmixing. Finally, add the all-purpose flour and mix until just incorporated.

    Pour into crust

    Pour the cream cheese filling into the cooled graham cracker crust, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to set completely. Before serving, run a knife around the edge of the pan to loosen it, then remove the sides of the springform pan.
