    Prep the Vegetables

    Wash and slice the bell peppers, carrots, and snap peas. Cut broccoli into florets and chop green onions.

    Prepare the Tofu

    Drain the tofu and press it to remove excess moisture. Cut it into bite-sized cubes.

Cooking

    Heat the Oil

    In a large pan or wok, heat the vegetable oil over medium-high heat.

    Cook the Tofu

    Add the cubed tofu to the hot oil and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Then, add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for about 5-6 minutes until vegetables are tender but still crisp.

    Add Tofu and Sauce

    Return the cooked tofu to the pan. In a small bowl, mix soy sauce, sesame oil, and cornstarch (if using) with water. Pour the sauce over the stir-fried vegetables and tofu. Stir well to combine and cook for an additional 2-3 minutes.

    Season and Serve

    Season with salt and black pepper to taste. Top with chopped green onions before serving. Enjoy your vegetable stir-fry hot over rice or noodles.
