Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the chopped onion and green bell pepper. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Remove from heat and set aside.

Combine Filling Ingredients
Once the steak has rested, slice it thinly against the grain. In a mixing bowl, combine the sliced steak, sautéed vegetables, and provolone cheese. Toss the mixture together until well combined.

Lay a spring roll wrapper on a clean, flat surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly to enclose the filling. Seal the top corner with a little beaten egg.

In a deep frying pan, heat vegetable oil over medium heat. Once hot, carefully add the spring rolls in batches, frying for about 3-4 minutes on each side or until they are golden brown and crispy. Remove and drain on paper towels.
