Mix Ingredients
In a large bowl, combine ground pork, bread crumbs, egg, garlic powder, onion powder, salt, black pepper, and chopped parsley. Mix until well combined.

Form Meatballs
Shape the mixture into meatballs, about 1 inch in diameter.

Cook Meatballs
Preheat your oven to 400°F (200°C). Place meatballs on a baking sheet and bake for 20-25 minutes, or until cooked through.

Make Roux
In a saucepan, heat pork drippings over medium heat. Add flour and stir continuously for about 2 minutes to form a roux.

Slowly whisk in chicken broth, ensuring there are no lumps. Bring to a simmer.

Season with salt and black pepper. Cook for an additional 5-7 minutes until it thickens.
Sandwich Assembly

Prepare Sub Rolls
Slice each sub roll lengthwise without cutting all the way through.

Place 3-4 meatballs in each roll, top with gravy, and layer with sharp provolone cheese.
