Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, lemon juice, garlic powder, paprika, cayenne pepper, salt, and black pepper until well combined.

  2. 2

    Marinate the Cod

Place the fresh cod fillets in a shallow dish and pour the marinade over the fish. Ensure the fillets are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to infuse.

Cooking

  1. 3

    Grilling the Cod

Preheat your grill to medium-high heat. Remove the cod from the marinade and let excess marinade drip off. Place the fish directly on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

  2. 4

    Frying the Cod

Heat a skillet over medium heat and add a little olive oil. Remove the cod from the marinade and gently place the fillets in the hot skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

  3. 5

    Blackening the Cod

Heat a cast-iron skillet over high heat until very hot. Remove the cod from the marinade and coat both sides with additional paprika and cayenne pepper for extra flavor. Place the fish in the hot skillet and cook for about 3-4 minutes on each side, or until the fish is charred and cooked through.

Serving

  1. 6

    Plate the Cod

Once cooked, remove the cod from the heat and let it rest for a couple of minutes. Serve the fillets on a plate, garnished with chopped fresh parsley and lemon wedges on the side.
