Fish Preparation

Prepare the Batter
In a large mixing bowl, combine the flour, cornstarch, paprika, cayenne pepper, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

Fry the Fish
Heat the vegetable oil in a deep skillet over medium-high heat. Dip each fish fillet into the batter, allowing excess to drip off, and carefully place in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove the fish and drain on paper towels.

Mix the Slaw
In a large bowl, combine the shredded cabbage, grated carrot, and chopped cilantro. Drizzle lime juice over the mixture and add salt. Toss well to combine and set aside to let the flavors meld.
Chipotle Sauce Preparation

Make the Sauce
In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, and garlic powder until smooth. Adjust seasoning to taste.

Assemble the Tacos
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side. Place a piece of fried fish on each tortilla, top with cabbage slaw, and drizzle with chipotle sauce. Serve with lime wedges on the side.
