Prepare the Marinade
In a mixing bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, dried oregano, dried thyme, olive oil, and apple cider vinegar. Mix well to create a marinade.

Marinate the Meat
Place the top round roast and pork belly in a large zip-top bag or a shallow dish. Pour the marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 325°F (163°C).

Roast the Meat
Remove the marinated meat from the refrigerator and allow it to sit at room temperature for about 30 minutes. Place the top round roast in a roasting pan, and if using, place the pork belly on top. Roast in the preheated oven for 1.5 to 2 hours, or until the internal temperature of the top round roast reaches 135°F (57°C) for medium rare.

Rest the Meat
Once cooked, remove the meat from the oven and let it rest for at least 15-20 minutes before slicing. This allows the juices to redistribute.
