    Sauté the Base Vegetables

    In a large pot, heat the olive oil over medium heat. Add the minced shallots and sauté for about 3-4 minutes until they are translucent.

    Add Garlic and Other Vegetables

    Stir in the minced garlic, celery, and carrots. Cook for an additional 5 minutes until softened.

    Incorporate Tomato Paste

    Mix in the tomato paste and cook for another 2 minutes, stirring frequently to blend with the vegetables.

    Pour in the Stock

    Add the fish or seafood stock and bring the mixture to a boil. Reduce to a simmer and add the bay leaves and dried thyme.

Cooking the Bisque

    Simmer the Base

    Let the mixture simmer for 25-30 minutes to allow the flavors to meld together.

    Add Crab and Cream

    Stir in the lump crab meat and heavy cream. Allow the bisque to return to a gentle simmer.

    Season to Taste

    Season with salt, black pepper, and lemon juice. Adjust seasoning according to preference.

    Remove the bay leaves before serving. Ladle the bisque into bowls and garnish with fresh parsley. Serve hot.
