For the Cheesesteak Filling

Preparation of the Filling

    Slice the Meat

    If using ribeye steak, slice it thinly against the grain. If using chicken breast, cut it into thin strips.

    Prepare the Vegetables

    Slice the onion, green bell pepper, and mushrooms into thin strips.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, green bell pepper, and mushrooms. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are soft and caramelized. Remove from skillet and set aside.

    Cook the Meat

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced steak or chicken to the skillet. Season with garlic powder, salt, and black pepper. Cook for about 5-7 minutes, stirring frequently until the meat is cooked through.

    Combine Ingredients

    Once the meat is cooked, return the sautéed vegetables to the skillet. Stir to combine all ingredients well and cook for an additional 2-3 minutes.

    Add the Cheese

    Layer the provolone cheese slices on top of the meat and vegetable mixture. Cover the skillet with a lid and let it sit for about 2-3 minutes until the cheese is melted.

Assembly

    Prepare the Hoagie Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through.

    Fill the Rolls

    Once the cheese has melted, use a spatula to scoop the cheesesteak filling into each hoagie roll.

    Serve

    Serve the cheesesteaks warm, optionally with hot sauce or sautéed onions on top.
