    Wash and peel the Russet potatoes. Cut them into fries, about 1/4 to 1/2 inch thick.

    Soaking the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

    Remove the fries from the water and pat them dry with a clean towel. Carefully add a batch of fries to the hot oil and fry for about 4-6 minutes, or until they are golden brown and crispy. Do not overcrowd the pot.
