Salisbury steaks
Make the meat mixture
In a large bowl combine ground beef, ground pork, finely chopped onion, minced garlic, egg, breadcrumbs, milk, Worcestershire sauce, salt, and black pepper. Mix gently with your hands or a spatula until just combined; avoid overworking to keep patties tender.
Shape patties
Divide mixture into 4 equal portions (for smaller servings divide into 3). Form each portion into an oval patty about 3/4-inch thick. Make a slight indentation in the center of each patty to prevent puffing while cooking.
Sear the patties
Heat a large skillet over medium-high heat and add 2 tablespoons vegetable oil. When hot and shimmering, add patties (work in batches if necessary) and sear 3-4 minutes per side until a deep brown crust forms. Remove patties to a plate and reserve drippings in the pan.
Mushroom gravy
Season and simmer
Stir in 1 teaspoon Worcestershire sauce, 1 teaspoon soy sauce, and thyme. Bring gravy to a gentle simmer and allow to thicken, about 4-6 minutes. Taste and adjust salt and pepper. If gravy becomes too thin, simmer a few minutes longer; if too thick, add up to 1/4 cup additional broth.
Finish gravy and return patties
Optionally stir in 2 tablespoons heavy cream for a silkier finish. Return the seared patties to the skillet, spoon gravy over them, cover, and simmer on low 6-8 minutes until patties are cooked through (internal temp ~160°F / 71°C). Keep warm until serving.
Mashed potatoes
Savory green beans
Bring a pot of salted water to a boil. Add green beans and blanch 3-4 minutes until bright green and just tender. Drain and immediately plunge into an ice bath to stop cooking, then drain again.
In a skillet over medium heat, warm 1 tablespoon olive oil or butter. Add minced garlic and cook 20-30 seconds until fragrant. Add blanched green beans, toss to coat, and sauté 2-3 minutes until heated through. Season with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and finish with 1/2 tablespoon lemon juice if using.
To serve
Spoon a generous portion of mashed potatoes onto each plate. Place a Salisbury steak alongside and ladle mushroom gravy and mushrooms over the steak (and a little onto the potatoes if desired). Add a serving of savory green beans. Garnish with chopped fresh parsley or thyme if desired and serve hot.
