Preheat and prepare

Preheat oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease a loaf pan (9x5-inch) and set aside.

Sauté aromatics

Heat a small nonstick skillet over medium heat with 1 teaspoon neutral oil. Add the diced onion and a pinch of salt; cook, stirring, until softened and translucent, about 5–7 minutes. Add minced garlic and cook 30–45 seconds until fragrant. Remove from heat and let cool slightly.

Mix meatloaf

In a large bowl combine the ground beef and ground pork. Add the cooled onion-garlic mixture, egg, milk, 1 cup plain breadcrumbs, Worcestershire sauce, Dijon mustard, chopped parsley, 1 1/4 teaspoons salt, and 3/4 teaspoon black pepper. Using clean hands or a wooden spoon, gently mix until just combined — avoid overworking to keep the loaf tender.

Shape and top

Transfer mixture to the prepared baking sheet and shape into a 9x5-inch loaf (or press into the loaf pan). If using, sprinkle 1/4 cup panko or extra breadcrumbs over the top for a light crust.

Apply glaze

Whisk together 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar, and 1/4 teaspoon hot sauce (optional). Brush about two-thirds of the glaze evenly over the top of the meatloaf (reserve the rest).

Bake

Bake in the preheated oven for 45–55 minutes, until an instant-read thermometer inserted into the center reads 160°F (71°C). About 10 minutes before the end of baking, brush remaining glaze over the meatloaf and continue baking until thermometer reaches temperature and glaze is set.

Rest and slice

Remove meatloaf from oven and let rest for 10 minutes before slicing. Resting lets juices redistribute and makes slicing cleaner.

Buttery Mashed Potatoes

Cook potatoes

While the meatloaf bakes, place peeled and cubed potatoes in a pot and cover with cold water by 1 inch. Add 1/2 teaspoon salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 12–15 minutes.

Drain and mash

Drain potatoes thoroughly and return to the hot pot off the heat for 1 minute to evaporate excess moisture. Add 3 tablespoons butter and begin mashing with a potato masher or ricer.

Finish

Stir in warmed 1/2 cup milk a little at a time until you reach desired consistency. Season with 3/4 teaspoon salt and 1/4 teaspoon black pepper. Keep warm until ready to plate.

Corn

Cook corn

When meatloaf is in the oven and potatoes are nearly done, heat 1 tablespoon butter in a medium skillet over medium heat. Add 2 cups frozen corn and cook, stirring occasionally, until heated through and starting to brown in spots, about 4–6 minutes.

Season

Season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook another 30 seconds and remove from heat. Keep warm until serving.
