Mocha Coffee Base
Brew the Coffee
Prepare 1 cup of espresso or strong brewed coffee. Set aside.
Mix Cocoa and Sugar
In a small saucepan, combine 2 tablespoons of unsweetened cocoa powder and 1 tablespoon of granulated sugar.
Add Coffee and Milk
Gradually whisk in the brewed coffee until well combined. Then add 1 cup of milk and peppermint extract. Heat over medium heat until steaming, but do not boil.
Froth the Mixture
Use a milk frother or whisk vigorously to create a frothy texture in the mocha mixture.
Brulee Topping
Prepare the Brulee Topping
In a small bowl, mix 2 tablespoons of granulated sugar with 1 tablespoon of water to create a syrup.
Caramelize the Sugar
Pour the syrup into a small saucepan and heat over medium heat, stirring until the sugar dissolves and turns a light golden color.
Brulee the Topping
Carefully pour the caramelized sugar over the top of the mocha mixture, tilting the cups to ensure even coverage. Use a kitchen torch to caramelize the sugar until it forms a hard, crispy top.
