Method

Preparation of Ingredients

  1. 1

    Clean and Prepare Mushrooms

Gently clean the wild mushrooms with a damp cloth to remove any dirt. Trim the stems and chop the mushrooms into bite-sized pieces.

  2. 2

    Chop Vegetables

Chop the onion, garlic, carrot, and celery into small, uniform pieces to ensure even cooking.

Cooking the Soup

  1. 3

    Sauté the Vegetables

In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 4

    Cook the Mushrooms

Add the chopped wild mushrooms to the pot and cook for another 5 minutes, stirring occasionally until they start to release their moisture.

  3. 5

    Add Broth and Seasonings

Pour in the vegetable broth and add the fresh thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

  4. 6

    Blend the Soup

After simmering, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

  5. 7

    Stir in the Cream

Add the heavy cream to the blended soup and stir well. Heat gently for another 5 minutes without boiling.

Serving the Soup

  1. 8

    Serve Hot

Ladle the wild mushroom soup into bowls and serve immediately accompanied by slices of crusty bread.
