Sandwich Preparation

    Prepare the Eggs

    In a non-stick skillet over medium heat, add a little oil or butter. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Remove from heat.

    Cook the Ham or Bacon

    In the same skillet, add the local ham or peppered bacon and cook until heated through or crispy, about 3-5 minutes. Remove from skillet.

    Assemble the Sandwich

    Slice the croissants in half. Layer the smoked gouda cheese on the bottom half, followed by the cooked ham or bacon, and then top with the over-medium egg. Place the top half of the croissant on the sandwich.

Fried Smashed Potatoes Preparation

    Boil the Potatoes

    In a pot, bring salted water to a boil. Add the medium potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Smash the Potatoes

    Once cool enough to handle, gently smash the potatoes with the bottom of a glass or a potato masher to flatten them slightly.

    Fry the Potatoes

    In a large skillet, heat the olive oil over medium-high heat. Add the smashed potatoes and season with garlic powder, salt, and pepper. Fry until crispy and golden brown, about 3-4 minutes on each side.

    Garnish

    Remove from heat and sprinkle with fresh parsley before serving.
