Prepare the Calamari

Clean and Cut Calamari
If not pre-cleaned, rinse the calamari under cold water. Remove any insides and skin, then cut into rings. Pat dry with paper towels.

Marinate Calamari
In a bowl, combine the calamari rings and buttermilk. Let marinate for at least 30 minutes in the refrigerator.
Prepare the Breading

Mix Dry Ingredients
In a large bowl, combine flour, cornstarch, salt, black pepper, and paprika. Mix well.

Fry the Calamari

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Bread the Calamari
Remove calamari from buttermilk, letting excess drip off. Dip into the egg wash, then dredge in the flour mixture, ensuring each piece is well coated.

Fry the Calamari
Carefully place breaded calamari into the hot oil in batches, frying for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Prepare the Spicy Aioli

Mix Ingredients
In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Stir until smooth and adjust seasoning to taste.

Serve the crispy calamari hot with spicy aioli and lemon wedges on the side for squeezing over the calamari.
