Smashed Potatoes

    Boil the Potatoes

    Place the russet potatoes in a large pot and cover with water. Add a pinch of salt. Bring to a boil over high heat and cook for 15-20 minutes, or until fork-tender.

    Smash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, salt, and black pepper. Use a potato masher to smash them to your desired consistency.

    Prepare the Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Eggs

    Heat olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and gently stir with a spatula until the eggs are softly scrambled and cooked through, about 3-5 minutes.

Toppings

    Blister the Tomatoes

    In the same skillet, add the halved cherry tomatoes. Cook over medium heat until they begin to blister and soften, about 3-4 minutes.

    On a plate, layer the smashed potatoes, followed by the scrambled eggs, diced local ham, shredded cheddar cheese, and a generous drizzle of sausage gravy. Top with blistered tomatoes and sliced scallions.
